I was asked by Boston based Culture Cheese Magazine to spend a day with Mike Thomson of Mike’s Fancy Cheese, to accompany an article by US based food & travel writer Lynn Freehill-Maye (who had coincidentally airbnb-ed with us when she was writing the article a few months earlier!)
Hanging out with Mike, Jonathan & Emily for a day was definitely fun, despite the dawn start (Cows wait for no man!) - The overpowering wave of ammonia in the cheese storage room will stay with me forever!

Subsequently, some of the images were published in the Irish Times article (keeping it mouldy)
